About Paul
I owned and operated Paul's Sausage Shack and Catering Services for 16 years, and the last two years re-named it LaFerriere's Catering Services LLC. I have been cooking since I was knee high to a grasshopper! And am a self taught Chef and caterer. I have done hundreds of events and weddings combined throughout the 18 years. I have taught children how to make unique dishes, and helped friends in the kitchen expanding their knowledge of seasonings, techniques, and expanding their culinary palette. I am retired now and enjoy teaching people how to create delicious dishes, and chef skills. I have 23 years in the Army and 18 years law enforcement retired in both as well. I was the training NCO for my section I was assigned to for 10 years, training troops in their military occupational skills, soldiering, and more. I tutored a student for 2 years. I have been a Sous Chef for two well known chefs for a catering job in which I am proud to say they couldn't believe I am self taught.
I LOVE creating dishes with new people that want to learn and eat great food. I have patience and will take the time to explain things so that everyone can learn with confidence.

1. Introduction and discussion with student their expectations of what they want to learn.
2. Introduce the student to basic culinary skills, to include knife skills and sharpening skills.
3. Introduce student to the basics of spices and when and how to use them.
4. Ask student which dishes they wish to start to create, and then begin the process of writing down the recipe.
5. Take the student shopping if possible for the ingredients.
6. Start the process of prepping the meal. Teach about cross contamination and food safety and cleanliness of work area.
7. Introduce student to the stove and oven and temperature settings and timers.
8. Student starts making the desired meal.
