I have always wanted to make a cheesecake. A stiff New York style cheesecake with crunchy crust. It was a hit at Thanksgiving. And due to popular demand it will be made for Christmas as well. Craig taught me the basics of how to prep food and the chemistry of it, which I think why everything I tried to make was "off". I highly recommend Craig. He really knows his craft and how to teach it.
