Apprenticeship in a hotel restaurant in eastern France for two years with the CAP diploma in Classic French Cuisine. Cook for over thirty years in French and Italian restaurants in Paris and London. Self-employed chef at home for twelve years in Ile de France.

Chef with more than twenty years of experience in several French and Italian gourmet restaurants in Paris and London, I decided to share my passion with you at your home. I suggest you be your coach in order to improve yourself by teaching you the main basics of French cuisine. TECHNIQUES: chop, chop, mince, trim, cut, lift, turn. COOKING: poach, roast, grill, fry, sauté, braise. BASES AND SAUCES: poultry, stock, stable and unstable emulsions, butters, velvety. PASTA AND CREAM: shortbread, puff pastry, cabbage, brioche, pancakes, shortbread, sponge cake, pastry, English, whipped cream, inverted. SEASONING: acidic, saline, compound, sweet, sour, aromatic. I offer you a menu from the different regions of Metropolitan France SALTED (your choice) Salmon steak cooked on one side, Nantes butter and julienne vegetables (PAYS DE LA LOIRE). Pan-fried poultry escaloppe Vallée d'Auge, cider cream and roasted apples (NORMANDY). Gnocchi à la Parisienne au gratin with grated cheese, velouté from Marquis Béchamel. (ILE-DE-FRANCE). Lunchtime vegetables stuffed with Nicoise, tomato coulis with Mediterranean herbs (PACA). Piece of beef seared on the grill with Béarnaise sauce and Sarladaise potatoes (NEW AQUITAINE). Garbure Gasconne simmered with seasonal vegetables, shredded duck with condiments (OCCITANIA). Paté du Berry in oven-roasted turnover, mache salad with diced goat cheese (CENTER VAL DE LOIRE). SWEET (your choice) Fiadone Corse macerated in lemon juice and zest (CORSICA) Fondant tartlet with cottage cheese and raisins with rum (GRAND EST). Soft waffles from Pas de Calais and vanilla-flavored Chantilly. (HAUT DE FRANCE). Dijon and English gingerbread infused with orange flavor (BURGUNDY FRANCHE COMTÉ). Far Breton with marinated prunes cooked in spicy red wine (BRITTANY). Creamy baked Savoie cake with milk chocolate glaze (RHÔNE ALPES AUVERGNE). I travel throughout the Ile de France and you can also take lessons in my workshop. The price is reduced according to the number of people and it includes transport costs as well as the ingredients bought at the market.
