About Elsa

i started with small sessions with the Girl Scouts groups in my community, teaching girls how to make desserts taht looked nice and tasted great, without baking or refrigeration.

Then I started doing some birthday parties.

Eventually i decided to turn it into my job :)

training:

16 years as a girl scout, starting as a daisy to becoming a district leader (training both large and small groups of Daisies (ages 8-12) and training the future Leaders of Daisies groups)

Masters Degree in Pastry from Prestigeous School in Paris

Teaching at SUR LA TABLE in California, Adult classes as well as the Kids Baking Camps

Developing and Training Beginners to become Pastry Professionals

About the lesson

Steps:

Break the ice and ask a few questions to determine the level of knowledge of the student.

Start off with basics (either beginner or refresher)

Go over the lesson plan and the recipes to be made during this class

Follow a logical and chronological flow to ensure optimal usage of teh time.

I have worked with kids 8-12

teenagers 13-17

adults

Hire some one who loves what they do and love to talk about it. You want a teacher taht will tell you exactly what they are thinking as tehy are showing you every step.

At the End of the Kids Baking Camp, they have a small competition. Seeing the kids implement all the techniques they were taught during the week and work out the kinks in the recipes on their own, and finally present a very nice and quite delicious product is very heart warming.

Recipes were yummy; everything was well planned out; cooking tips were great; she went around and helped all groups individually as needed, and also shared results good/ bad with everyone to improve learning and understanding. Always smiling.
