Award-winning chef and restaurateur conducting classes in Pretoria and centurion. My focus is Italian and French cuisine. I also instruct in SOUS VIDE cooking.

Methodology

I create an environment that is relaxed and joyful. After all, that's what great food does to our psyche.
My lessons are structured firstly on safety and theory. Secondly on preparation, precision, and technique especially the sous vide lessons. I also include an interesting history of well-known dishes. My philosophy is old school. Feeding and teaching people the DOLCE VITA is an act of love and goodwill.

Background

I have 30 plus years in the hospitality and food and beverage space. for the last 9 years, I have consulted with the industry. I have mentored and trained countless chefs and food and beverage people on the job. In real operational environments. I have also owned my own restaurants. My last restaurant was voted in the top 100 in South Africa by the wine magazine and the renowned food critic Anna Trapido.

Background:
I am a seasoned chef/hospitality/restaurateur. I’ve worked in hotels and restaurants professionally since the age of 20. My family has also owned restaurants and hotels. So you may say I’ve inherited the profession.
I graduated from the INTEC hotel school in 1989. I also completed a chef’s diploma with the Italian culinary institute in Genoa in 1990.
I also have a N4 (electrical) From the Technicon of Krugers Dorp
I worked in a restaurant in Le Cinque Terre on the Ligurian coast of Italy for 6 years.
I have also done contractual work for different companies including a Game Lodge as well as franchising.
I have mostly been self-employed and have owned four restaurants two in Johannesburg and 2 in Pretoria.
My restaurant Villa Francesco was rated favorably by the food critic Anna Trabido. Her review got me in the top 100 restaurant in South Africa. Google “VILLA FRANCESCO PRETORIA” to read the review. I was also rated by Peter John smith of Radio South Africa as well as Jenny Cruz Williams of 702. At the Lombardy my wine list was awarded Platinum by diners club.


A large part of my business is developing KPIs and SOPs into efficient and productive machinery. My methods are centered on BI to make the correct decisions and implement effective strategies.
Villa Francesco
Duration: March 2006 to December 2011
This was my own restaurant. I opened in January 2005 and sold it in 2011
Villa Francesco was rated in the top 100 restaurants of South Africa in 2008 by the South African wine magazine.
Lombardy and La Stalla
Duration: February 2000 to December 2005
These establishments belonged to family of mine. They sold the property to a Kuwaiti conglomerate in 1999.Part of the sale agreement was to re-launch the two restaurants. After this was done I leased La Stall from Karafi Holdings till I opened Villa Francesco. The Lombardy was a boutique hotel. First with 8 rooms. Which later expanded to 12. We had a 30 setter fine dining restaurant as well as a wine cellar with approximately 30 thousand bottles of wine.
Johannesburg
Café della Salute.
Duration: June 1994 to October 1999
Prior to coming to Pretoria my cousin and I owned a restaurant on Sandton square called Café della Salute. We sold this business due to the separation of our partnership.
Holiday Inn
Duration: June 1992 to April 1994
I also worked for the Airport Sun and Towers. This was a five star hotel which was downgraded to a holiday inn Garden Court. I held the position of assistant F&B Manager. I was retrenched.
From 1985 to 1991 I was in Italy on the Ligurian cost working in the family’s restaurant and hotel.
